I felt this recipe tedious and time taking. But when I tasted it, I forgot my exhaustion and felt revived.This dish is excellent for children but not for adults.The only reason why I tried this is because we spend a lot of money for fresh sweets if we have a sweet tooth.I just wanted to see how much this costs if I make them at home and do they taste in par with the outside sweets.I was successful. Its worth giving a try.Preparation time: 3 hrsWorking time: 30 min.Serving size: 6-8 membersIngredients:1.If you are preparing from scratch, here is the list:Whole milk: 3 litresSugar:2 and 1/2 cupswater:4 cupsAlmonds & Pistachio: 2 tsp each ( thin slices)Cardamom powder:1/2 tspSaffron: a pinch2.If you want to buy paneer from outside...then:Milk: 1 litreRest of the ingredients are same.But paneer should be freshly made and soft. I didn't want to take risk as these sweets go for a party. So I made from scratch.Method:If you see my previous posts, you'll find a recipe called 'Rosogolla'.I have described how to make paneer in that recipe.The residue that remains in the muslin cloth/ handkerchief is called 'Paneer'.Step 1#Take a thick and wide bottomed if possible non stick vessel.Let us call this as vessel no.2. Boil 1 litre of milk and 1 cup of sugar on medium and then low heat.Milk should be boiled till the contents become 2/3 of the original volume.When it is done, add sliced almonds & pistachio. Sprinkle cadamom powder.Step 2#Take one more vessel, just as described above and let us call this as vessel no.1. In this vessel, follow the procedure of Rosogolla completely.Start step 1 ahead of step 2 in order to save time.When boiling of paneer balls for 15 min., is over, drain the balls with help of a strainer. Transfer these balls into vessel no.2 after the step 1 is complete. Allow the balls to boil for 2 more minutes.Remove from heat. Transfer this carefully into the serving bowl, sprinkle saffron over it.It gives a beautiful yellow colour.( I didn't use saffron because a small amount may be 10 gram costed $10.I didn't add pistachio too.Refrigerate it for 2-3 hrs and serve.I agree that its laborious work but it boosts up your confidence graph wildly.
