I tried to make a simpler version of Rasmalai but in vain.This experiment turned out into an another tasty recipe.Preparation time: 20 min.Ingredients:Whole milk Ricotta cheese : 2 cupsSugar : 1 and half a cupMilk : 1 cupCardamom : 1/2 tspSaffron : a pinch ( optional)Almonds & Pistachio : 1 tsp each ( optional)Method:Take 2 cups of ricotta cheese & half a cup of sugar in a mixing bowl. Mix them really well until the last grain of sugar dissolves in the cheese.Either you take the help of electric hand mixer ( it would make this step easier) or a whisk.Spread this mix in a baking dish evenly. Place an aluminium wrap in the baking dish, grease it and then pour this mixture. This makes 'cleaning-the-baking dish' hassle easy.Bake it at 250 F.This again depends on the condition of your oven.Bake it until the toothpick comes out clean when inserted in the mix.That might take around 15 min.Meanwhile, boil half and half milk & sugar.When it becomes 2/3rd the total volume, add cardamom and saffron.Take out the baking dish when it is done, cut the prepared substance ( could be Rasmalai pieces) into desired shapes.Add these pieces to the boiled milk. Garnish with the nuts.Chill & serve.
